Eucheuma Cottonii Algae

also called sea-bird’s nest, underwater bird’s nest, coral grass, yogurt coral grass.
The white E.Cottoni alga is a rare raw, dried algae with a neutral taste and an interesting crunchy consistency.
The algae is used as an eyecatcher in salads and soups or as raw or blanched delicacy in cold dishes or marinated in seafood salads and as decoration. Use in vegan cooking as a gelling, binding and thickening agent for dessert creams, ice cream, pies or sauces or in drinks (similar to aloe vera jelly consistency).
Eucheuma Cottonii contains a great deal of natural plant collagen protein and high nutritional value due to vitamins, calcium, iron, magnesium, potassium, phosphorus and minerals. However, the biggest industry interest is the carrageenan contained in Cottinii seaweeds used in pharmaceutical and food businesses.
The industry has a constantly growing demand. ‘Carrageenan’ is used in the production of desserts, milkshakes, sauces (to increase the viscosity), toothpaste, shampoos and cosmetic creams (thickeners), air fresheners (gelling agents) and pharmaceutical capsules or for ice creams, chocolate, pudding, cake fillings, yoghurt, desserts, canned food used as a natural ingredient.
The algae are dried and freshly sealed in a 100gr/3.5oz aluminium doypacks, made in Germany.
As soon as these are watered and blanched, the consumption weight increases by about 50%.
There are only a handful of farms, mainly located around the equator in tropical and subtropical waters, that have been able to farm Eucheuma Cottonii successfully.
Other names for the seaweed include “Poseidon seadweed” (due to its form shaped like a Poseidon’s trident) and “bird’s nest coral” as the cottonii algae can be consumed as a soup that
is very similar in taste to the controversial “Bird’s Nest Soup” of which we’re a huge enemy! Luckily our Eucheuma are 100% plant based and no animals are harmed to produce this
delicious type of seaweed. The nutritional value of Eucheuma Cottonii seaweed is even 10 times higher than the bird’s nest.
When extracted Eucheuma Cottonii seaweed contains precious plant collagen and enzymes that are widely used in cosmetics but can also be found in desserts, milkshakes, sauces (to incease viscosity) and even in beer as a clarifier!
Enjoy “Poseidon Seaweed” with soy sauce, lemon juice, fish sauce, wasabi, mayonnaise or chilli or add them as a crisp salad booster, snack, appetizer, canapé, antipasti, entree or hors d’oeuvre. You can even add the seaweed into your smoothie to consume the natural plant collagen protein “Carrageenan” as a liquid.

Shelf life: 24 months
STORAGE: Store unopened in sealed condition in a cool, clean, dark place away from direct sunlight for 24 months.
After opening storage in the delivered dry state in the bag of fresh food within 14 days, refrigerate.
