Sushi Buritto with Seagrapes / Green caviar 

Ingredients

for 2-4 portions:

  • 4.2oz/120g salmon OR tofu
  • 1/4 onion
  • 1 avocado to taste
  • grated ginger to taste
  • 1 tsp sesame oil
  • 2 1/2 tsp rice wine vinegar
  • nori sheets
  • 2 carrots
  • 1 tsp soya sauce
  • handful spring onion
  • cilli flakes to taste
  • 0.7/20g seagrapes (green caviar)
  • 1/2 cup brown rice
  • sushi rolling mat

Chicken Salad with Sea Grapes

 Sea Grapes / Chicken salad 

Ingredients

for 2 portions (non vegan):

  • 3.17oz/90g chicken thighs without bones
  • 1 pinch of salt and pepper
  • 1 tsp olive oil
  • halve of Chinese cabbage and cut into strips
  • 5 leaves of mint
  • 1 garlic clove finely chopped
  • 0.7oz/20g of seagrapes / green caviar
  • 1 ½ tsp fish sauce
  • ¼ cup of water
  • 1 teaspoon white vinegar
  • ½ lime
  • 1 pinch of sugar
  • 4 leaves of coriander

Sauces for Green Caviar

Thai Fishsauce and Japan. Miso-Sauce as a dip for Seagrapes 

Ingredients for 2 portions:

  • Thai fish sauce
  • 8 gloves of garlic
  • ½ bunch of cilantro
  • 6 red chilipods
  • 5 green chilipods
  • 5 leaves basil
  • 1 chines parsley root
  • 6 leaves of mint
  • lime juice

 

  • Miso sauce
  • 1 tsp miso paste
  • 1 tsp water
  • 1 lemon
  • Pinch of pepper
  • 2 tsp capers
  • 1 tsp brown sugar
